CHAMPAGNE SHRIMP AND PASTA

Prep time: 15 minutes

Cooking time: 20 minutes

Ready in: 35 minutes

 

Ingredients:

  • 8 ounces of pasta
  • 1 table spoon extra virgin olive oil
  • 1 cup sliced fresh mushrooms
  • 1 pound shrimp, peeled and deveined.
  • 1 1/2 cups champagne
  • 1/4 tablespoon sea salt
  • 2 tablespoons minced onions
  • 2 large tomatoes, diced
  • 1 cup cream
  • 3 tablespoons chopped fresh parsley
  • freshly grated Parmesan cheese

 

Step 1:

Bring a large pot of lightly salted water to boil. Cook pasta in boiling water for 6 to 8 minutes or until al dente; drain

Step 2:

Meanwhile, heat olive oil in medium heat in a large frying pan. Cook and stir mushrooms until tender. Remove mushrooms from the pan, and sat aside.

Step 3:

Combine shrimp, champagne and sea salt in the frying pan. Cook over high heat. When liquid starts to boil remove shrimp from pan. Add shallots and tomatoes to champagne; boil until liquid is reduced to 1/2 cup, about 8 minutes. Stir in 3/4 cup cream, boil until slightly thick, about 1 t0 2 minutes. Add shrimps and mushrooms to sauce, and heat through. Adjust seasoning to taste. 

Step 4:

Toss heat, cooked pasta with remaining 1/4 cup cream. Add parsley and top with Parmesan cheese.
